Riesling trocken von den Terrassen
Picked at Spätlese ripeness, this little brother to the single-vineyard Späts—its grapes come from the impossibly steep terraces of Hamm and Uhlen, along with choice plots in Domgarten—bears all the Knebel trademarks: depth and minerality, tension and extract, and a desire to go down with food. Roughly eight hours of skin contact, wild yeasts, and partially fermented in the cellar’s only large, used acacia barrel.
